Long live the Blast Chiller

So I'm sat in front of a roaring fire watching Masterchef on BBC2...

... when suddenly Michel Roux Jr, (and how cool is THAT dude by the way), backed up my blog post from 11th November!

The great man himself basically reinforced my point that no commercial kitchen is complete without a blast chiller.

  • The XR10 can chill 10kg of food from +70°C down to +3°C in 90 minutes
  • The XR20 can chill 20kg of food from +70°C down to +3°C in 90 minutes
